Oatiest Oatmeal Cookies

Here’s one of those recipes I have been making for years but also tweaking for years. I think i finally got it to where everyone loves them! I like my oatmeal cookies to be packed with the oaty flavor and these deliver! They are just awesome. They are on the chewier side – just to note – but we like them that way.

Ingredients
  1. 1 cup softened butter
  2. 1/2 cup white sugar
  3. 1 cup packed brown sugar
  4. 2 eggs
  5. 1 Tablespoon vanilla
  6. 1 cup whole wheat flour
  7. 1/2 teaspoon baking soda
  8. 2 teaspoons ground cinnamon
  9. 1 teaspoon salt
  10. 3 cups old fashioned oats
  11. 1 cup cracked wheat oats
Instructions
  1. Preheat oven to 325 degrees.
  2. Cream together butter & sugars until fluffy.
  3. Beat in eggs, one at a time.
  4. Stir in vanilla.
  5. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
  6. Add to creamed mixture.
  7. Mix in both oats until just blended.
  8. Drop by tablespoonfuls* onto a cookie sheet.
  9. Bake for about 14 minutes in the preheated oven.
  10. Let cool on pan for 5 minutes.
  11. remove to finish cooling on a wire rack.
Notes
  1. * I use a small metal ice cram scooper that holds about a tablespoon. This allows for uniform sized cookies. We just pack the scoop with dough, scrape against the side to make flat, then squeeze the handle and pop out the cookie dough onto the pan. Perfect cookies each time & no mess!

Cracked Wheat

This is what cracked wheat looks like. I buy mine bulk from Whole Foods or Earth Fare. Cracked Wheat is just wheat berries that have been cracked into small pieces. They stay chewy and hearty in this cookie.
