Zucchini Bread (v. 1)

Tonight I made a healthy zucchini bread. It came out well, so I am going to alter it yet again to make it even healthier because, well, by now you know that’s what I do. The recipe as prepared tonight is below. 🙂 Yummy. Hunter couldn’t stop eating it. The only fat in this is from the whole wheat flour & wheat germ and sugars are natural.

Ingredients
  1. 3/4 cup skim milk
  2. 4 egg whites eggs
  3. 3/4 cup turbinado sugar
  4. 1/3 cup natural applesauce
  5. 1 teaspoon vanilla extract
  6. 2 to 2-1/2 cups shredded zucchini
  7. 1-1/2 cups whole-wheat flour
  8. 1/2 cup wheat germ
  9. 2 teaspoons baking powder
  10. 1 teaspoon ground cinnamon
  11. 1/2 teaspoon salt
Instructions
  1. 1. Whisk together the wet ingredients and the sugar.
  2. 2. Add zucchini shreds to the wet ingredients and stir.
  3. 3. In a separate bowl, whisk together the dry ingredients.
  4. 4. Add the wet to the dry and stir until just combined thoroughly.
  5. 5. Pour mixture into a greased 8.5" or 9" loaf pan.
  6. 6. Bake in a preheated 350-degree oven for 55-65 minutes.
  7. 7. Let cool in the pan for 10-15 minutes before taking out and cooling on a rack.
  8. It's best to let cool completely first but we can never wait that long 🙂
