Tonight I made a healthy zucchini bread. It came out well, so I am going to alter it yet again to make it even healthier because, well, by now you know that’s what I do. The recipe as prepared tonight is below. 🙂 Yummy. Hunter couldn’t stop eating it. The only fat in this is from the whole wheat flour & wheat germ and sugars are natural.
Zucchini Bread

Ingredients
- 3/4 cup skim milk
- 4 egg whites eggs
- 3/4 cup turbinado sugar
- 1/3 cup natural applesauce
- 1 teaspoon vanilla extract
- 2 to 2-1/2 cups shredded zucchini
- 1-1/2 cups whole-wheat flour
- 1/2 cup wheat germ
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
Instructions
- 1. Whisk together the wet ingredients and the sugar.
- 2. Add zucchini shreds to the wet ingredients and stir.
- 3. In a separate bowl, whisk together the dry ingredients.
- 4. Add the wet to the dry and stir until just combined thoroughly.
- 5. Pour mixture into a greased 8.5" or 9" loaf pan.
- 6. Bake in a preheated 350-degree oven for 55-65 minutes.
- 7. Let cool in the pan for 10-15 minutes before taking out and cooling on a rack.
- It's best to let cool completely first but we can never wait that long 🙂
