I stumbled across a recipe on Blueberry Greek Yogurt Banana Bread on Daily Garnish. I loved the idea of using greek yogurt in it to boost the protein level but not happy about some of the other ingredients. In true me fashion, I changed it around 🙂 The result was extreme yumminess. The picture below was made with a vanilla coconut greek yogurt and sprinkled with a teaspoon of shredded coconut on top to compliment it. I can’t wait to pick strawberries and make this bread with fresh picked berries! I didnt have blueberries on hand so I added more banana. It’s easily changed up to accommodate any fruit.

Ingredients
- 1 1⁄2 cup Whole Wheat Flour
- 2 teaspoon Baking Powder
- 1⁄2 teaspoon salt
- 1⁄4 cup honey or agave (or 1/3 cup sucanat)
- 1 teaspoon vanilla extract
- 3 ripe bananas
- 4 egg whites
- 6 ounces greek yogurt (vanilla, or any flavor)
- 1 cup fruit (blueberries, strawberries, mango,...)
Instructions
- Preheat oven to 350 degrees F.
- Whisk flour, baking powder, and salt in a large mixing bowl.
- In a separate bowl, mash bananas with a fork.
- Add eggs, sugars, vanilla, & yogurt to bananas.
- Mix until everything is well combined and there are no big lumps.
- Pour the wet into the dry , and mix until just combined.
- At this point, fold in the additional fruit (blueberries, strawberries, blackberries, mango, anything really).
- Pour batter into a greased loaf pan and distribute evenly.
- Bake for 1 hour, or until the top is golden brown and a toothpick comes out clean.
- Transfer to a cooling rack and let the bread cool for at least ten minutes before slicing.
