Sometimes it’s all about simplicity. On the trek to a healthy rest of our lives, I look for healthy replacements to some of my vices. I gave up most sugar. I’m generally okay with that. Then a certain time comes around. I have pretty severe PMDD and I crave food: nothing specific but just want to eat and eat. Stupid hormones. Anyway, want to hear (well, see) the recipe for the simplest cookie recipe ever? You can’t mess this up! I added sucanat sugar sprinkled on top but it lost it’s crunch so next time I might try raw sugar instead. You can do add-ins like raisins, walnuts, or chips (chocolate or carob) but they all add calories and potentially fat. I like them plain & simple.
"What Could Be Simpler" Cookies

Ingredients
- 1 banana (ripe as can be)
- 1/2 cup oats
Instructions
- mash the banana.
- stir in oats.
- scoop tablespoon-sized dough balls onto a well greased cookie sheet.
- flatted slightly.
- sprinkle with sugar (if you choose).
- bake for 15 minutes at 350.
- let cool slightly before removing.
Notes
- I used my cookie scooper. Makes them nice & uniform.
- I lined my baking sheet with wax paper and sprayed it with baking spray (this stuff gets stuck on).
- Best enjoyed warm.
- Can easily double/triple the recipe.
